Ingredients
- 1 can canned pumpkin puree (15 oz can)
- 2 eggs (large)
- 0.33 cup pure maple syrup
- 0.25 cup unsweetened applesauce
- 1.75 cup whole wheat flour
- 1 teaspoon baking soda
- 1.5 teaspoon pumpkin pie spice
- 0.5 teaspoon salt
- 0.5 cup pecans (chopped)
Instructions
- Preheat your oven to 350 degrees Fahrenheit. Lightly grease an 8 1/2 x 4 1/2-inch loaf pan and line with parchment paper for easy removal.
- In a large mixing bowl, whisk together canned pumpkin puree, eggs, pure maple syrup, and unsweetened applesauce until smooth and well blended.
- In a separate bowl, stir together whole wheat flour, baking soda, pumpkin pie spice, and salt.
- Add the dry ingredients to the pumpkin mixture and stir with a spatula until just combined. Fold in chopped pecans, reserving 1 tablespoon for the top.
- Pour the batter into the prepared loaf pan, smooth the top, and sprinkle with the reserved pecans.
- Bake for 32 to 35 minutes until a toothpick inserted into the center comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before cutting into 8 thick slices.
Notes
