- 1 teaspoon ground cumin
- 0.5 teaspoon ground turmeric
- 0.5 teaspoon garam masala
- 0.5 teaspoon salt
- 3 tablespoon olive oil
- 10 whole wheat rotis (store-bought)
- 0.25 cup fresh cilantro (chopped)
Instructions
- Place 2 pounds diced red potatoes in a microwave-safe bowl with 2 tablespoons water, cover, and microwave on high for 3-5 minutes, until slightly tender but still firm. Alternatively, boil in a small pot for 5-7 minutes. Drain well.
- Heat 3 tablespoons olive oil in a large skillet or wok over medium-high heat. Add the chopped 1 yellow onion and sauté for 3 minutes until softened.
- Add the minced 2 cloves garlic, grated 1 inch fresh ginger, and thinly sliced 1 green chili (if using) to the skillet. Cook for 1 minute until fragrant.
- Stir in 1 tablespoon tomato paste, 1 teaspoon ground cumin, 1/2 teaspoon ground turmeric, and 1/2 teaspoon garam masala. Cook for 1 minute, stirring constantly.
- Add the par-cooked 2 pounds red potatoes and 1 cup frozen green peas to the skillet. Stir to coat with the spices. Add 1/2 teaspoon salt. Cook for 5-7 minutes, stirring occasionally, until potatoes are fully tender and peas are cooked.
- While the stir-fry finishes, heat 10 whole wheat roti according to package directions, typically in a dry skillet for 15-30 seconds per side until warm and pliable.
- Garnish the Aloo Matar Tarkari with chopped 1/4 cup fresh cilantro and serve hot with the warm roti.
Notes
Dicing the potatoes into small cubes helps them cook much faster. Using pre-made roti makes this a very quick meal. Feel free to adjust the spice level with more or less green chili.
