- 1 pound ground pork (80/20 lean)
- 1 yellow onion (diced)
- 1.5 pound small potatoes (scrubbed and diced into 1/2-inch pieces)

- 0.5 teaspoon dried thyme
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 12 ounce fresh green beans (trimmed)
- 0.5 cup chicken broth
Instructions
- Heat 1 tablespoon olive oil in a large, oven-safe skillet (cast iron works well) over medium-high heat. Add 1 pound ground pork and cook, breaking it up, until browned, about 5-7 minutes. Drain excess fat and set pork aside.
- Add the diced yellow onion and diced small potatoes to the same skillet. Cook, stirring occasionally, for 8-10 minutes, until potatoes start to soften and brown slightly.
- Stir in 1 teaspoon paprika, 1/2 teaspoon dried thyme, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Add 12 ounces fresh green beans and 1/2 cup water or chicken broth.
- Bring to a simmer, then cover the skillet and cook for 5-7 minutes, or until green beans are tender-crisp and potatoes are cooked through.
- Return the cooked ground pork to the skillet and stir to combine. Serve hot.
Notes
Using a cast iron skillet helps create a nice crust on the potatoes. You can also finish this dish under the broiler for a few minutes for extra browning if your skillet is oven-safe.
