Spiced Mojo Chicken and Roasted Potatoes

  1. Preheat oven to 425°F. Line a large baking sheet with parchment paper.
  2. In a medium bowl, combine 2 tablespoons olive oil, orange juice, lime juice, minced garlic, ground cumin, dried oregano, 1 teaspoon salt, and 1/4 teaspoon black pepper to make the mojo marinade.
  3. Add the cubed chicken breast and red potatoes to the bowl with the marinade. Toss well to coat. Let marinate for at least 5 minutes while the oven preheats.
  4. Spread the chicken and potatoes in a single layer on the prepared baking sheet. Roast for 15 minutes, flipping halfway, until chicken is cooked through and potatoes are tender and lightly browned.
  5. While chicken and potatoes roast, prepare the salad: In a large bowl, combine the mixed greens, sliced cucumber, and diced Roma tomato. Drizzle with remaining 2 tablespoons olive oil, 1/4 teaspoon salt, and 1/4 teaspoon black pepper, or your favorite vinaigrette.
  6. Serve the roasted Spiced Mojo Chicken and Potatoes with the green salad on the side.

Notes

Chicken cooks quickly when cut into small pieces. For even crispier potatoes, soak them in cold water for 15 minutes before roasting and pat dry.
