Instructions
- In a large bowl, combine the ground lamb, finely chopped yellow onion, 2 tablespoons chopped fresh parsley, 1 tablespoon chopped fresh mint, 1 teaspoon ground cumin, 1/2 teaspoon ground coriander, 1/2 teaspoon smoked paprika, 1/4 teaspoon black pepper, and 1/4 teaspoon sea salt. Mix well until all ingredients are thoroughly incorporated.
- Divide the mixture into 4 equal portions and shape each portion around a skewer or form into oblong patties.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the kofta and cook for 4 to 6 minutes per side, rotating, until browned and cooked through. Alternatively, grill over medium heat for 8 to 12 minutes, turning occasionally.
- While the kofta cooks, prepare the creamy tahini sauce: In a small bowl, whisk together the plain unsweetened Greek yogurt, tahini, 1 tablespoon fresh lemon juice, 1/4 teaspoon garlic powder, and a pinch of sea salt and black pepper until smooth. Adjust seasoning to taste.
- Prepare the side salad: In a separate bowl, gently toss the diced cucumber and mixed greens. Drizzle lightly with olive oil or a splash of lemon juice if desired.
- Serve the cooked lamb kofta immediately with the creamy tahini sauce and the refreshing cucumber and mixed greens salad.
Notes
For best flavor, allow the lamb mixture to marinate in the refrigerator for at least 30 minutes before shaping. Ensure your ground lamb is at least 80/20 fat for juicy kofta.
