Spiced Lamb & Hummus Wraps with Fresh Chopped Salad

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground lamb and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
  2. Add the chopped yellow onion and minced garlic to the skillet with the lamb. Cook for 3-4 minutes until softened. Stir in the dried oregano, ground cumin, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Cook for 1 minute more until fragrant.
  3. While the lamb cooks, prepare the chopped salad: In a medium bowl, combine the diced Roma tomatoes, diced English cucumber, thinly sliced red onion, chopped fresh parsley, and lemon juice. Drizzle with the remaining 1 tablespoon of olive oil and toss to combine.
  4. Warm the pita bread according to package directions, either in a dry skillet, microwave, or oven.
  5. To assemble the wraps, spread a generous spoonful of hummus onto each warm pita. Top with the spiced lamb mixture and a spoonful of the fresh chopped salad. Fold or roll up and serve immediately.

Notes

Any leftover lamb mixture and salad can be stored separately in the refrigerator for up to 3 days and reassembled for quick lunches.
