Spiced Lamb Chops with Roasted Cauliflower Steaks

  1. Preheat oven to 400°F (200°C). In a small bowl, combine 1 tablespoon ground cumin, 1 tablespoon smoked paprika, 1 teaspoon ground coriander, 1/2 teaspoon garlic powder, 1 teaspoon salt, and 1/2 teaspoon black pepper to make the spice blend.
  2. Pat the lamb loin chops dry with paper towels. Rub each chop generously with 1 tablespoon of olive oil, then season all sides with the prepared spice blend. Set aside.
  3. Place the cauliflower steaks on a large baking sheet. Drizzle with 3 tablespoons of olive oil, sprinkle with 1/2 teaspoon dried thyme, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Turn to coat both sides. Roast for 20-25 minutes, flipping once halfway through, until tender and lightly browned.
  4. While the cauliflower roasts, prepare the herb dressing: In a small bowl, whisk together 1/2 cup chopped fresh parsley, 1/4 cup chopped fresh mint, 2 tablespoons fresh lemon juice, and 2 tablespoons olive oil. Season with a pinch of salt and pepper.
  5. Heat a large skillet or cast-iron pan over medium-high heat until hot. Add the seasoned lamb chops and sear for 3-5 minutes per side for medium-rare, or longer for desired doneness. Remove from pan and let rest for 5 minutes.
  6. Serve the rested spiced lamb chops with the roasted cauliflower steaks and a generous drizzle of the fresh herb dressing.

Notes

For best results, allow the lamb chops to come to room temperature for about 15 minutes before searing. Adjust the cooking time for the lamb to achieve your preferred level of doneness.
