- 1.5 pound sweet potato (peeled, cut into 1-inch cubes)
- 1 red bell pepper (large, cored, seeded, cut into 1-inch pieces)
- 1 yellow bell pepper (large, cored, seeded, cut into 1-inch pieces)
- 1 red onion (small, cut into wedges)
- 1 cup broccoli florets
- 2 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 0.5 teaspoon paprika
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 2 tablespoon fresh parsley (chopped)
Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- In a large bowl, combine the sweet potatoes, red and yellow bell peppers, red onion, and broccoli florets. Add the olive oil, garlic powder, dried oregano, paprika, salt, and black pepper. Toss well to ensure all the vegetables are evenly coated with the seasoning.
- Spread the seasoned vegetables in an even layer on the prepared baking sheet. Add the Italian sausage pieces, distributing them among the vegetables.
- Roast for 20-25 minutes, or until the vegetables are tender-crisp and the sausage is cooked through and lightly browned. Halfway through cooking, give everything a good stir to ensure even roasting.
- Remove from the oven, garnish with fresh parsley if desired, and serve hot.
