  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced yellow onion and cook until softened, about 3-4 minutes.
  2. Add the ground pork to the skillet, breaking it up with a spoon. Cook until browned, about 5-7 minutes.
  3. Drain any excess fat from the skillet. Stir in the chili powder, ground cumin, smoked paprika, garlic powder, and onion powder. Cook for 1 minute until fragrant.
  4. Pour in 1/2 cup of water and bring to a simmer. Season with salt and black pepper to taste. Cook until the liquid has mostly evaporated, about 5 minutes.
  5. While the pork is simmering, warm the corn tortillas according to package directions.
  6. Serve the spiced ground pork in warm corn tortillas, topped with shredded lettuce, salsa, sour cream, and optional chopped fresh cilantro.
