Ingredients
- 1 tablespoon olive oil
- 1 yellow onion (medium, finely diced)
- 1 pound ground pork
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 0.5 teaspoon smoked paprika
- 0.25 teaspoon garlic powder
- 0.25 teaspoon onion powder
- 0.5 cup water
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 12 corn tortillas
- 1 cup shredded lettuce
- 0.5 cup salsa
- 0.5 cup sour cream
- 0.25 cup fresh cilantro (chopped)
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced yellow onion and cook until softened, about 3-4 minutes.
- Add the ground pork to the skillet, breaking it up with a spoon. Cook until browned, about 5-7 minutes.
- Drain any excess fat from the skillet. Stir in the chili powder, ground cumin, smoked paprika, garlic powder, and onion powder. Cook for 1 minute until fragrant.
- Pour in 1/2 cup of water and bring to a simmer. Season with salt and black pepper to taste. Cook until the liquid has mostly evaporated, about 5 minutes.
- While the pork is simmering, warm the corn tortillas according to package directions.
- Serve the spiced ground pork in warm corn tortillas, topped with shredded lettuce, salsa, sour cream, and optional chopped fresh cilantro.
