Instructions

  1. Heat vegetable oil in a large skillet over medium-high heat. Add ground pork and diced yellow onion. Cook, breaking up the pork with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.
  2. Stir in the chili powder, ground cumin, garlic powder, and salt. Cook for 1 minute more, stirring constantly, until fragrant.
  3. Add 1/4 cup water to the skillet, bring to a simmer, and cook until most of the liquid has evaporated, about 2-3 minutes. This will create a saucy, flavorful pork.
  4. While the pork is cooking, combine the pre-shredded cabbage mix and lime juice in a small bowl for a quick slaw. Stir in the chopped fresh cilantro.
  5. Warm the flour tortillas according to package directions. Heat the rinsed and drained black beans in a small saucepan or microwave until warm.
  6. Assemble tacos by spooning the spiced ground pork into warm tortillas, topping with the cabbage slaw, and serving with a side of warm black beans.

Notes

For extra crunch, lightly toast the tortillas in a dry skillet before filling.
