Instructions
- Heat 1 tablespoon olive oil in a large oven-safe skillet over medium-high heat. Add 1 pound ground beef and cook, breaking it apart, until browned, about 5-7 minutes. Drain any excess fat.
- Add 1/2 diced yellow onion, 1 minced garlic clove, and 1 diced bell pepper to the skillet. Sauté for 3-5 minutes, until vegetables are slightly softened.
- Stir in 1 tablespoon chili powder and 1 teaspoon ground cumin. Cook for 1 minute until fragrant.
- Add 1 (15-ounce) can black beans (rinsed and drained), 1 cup frozen corn, and 1/2 cup water. Bring to a simmer and cook for 3-5 minutes, allowing flavors to meld. Season with salt and black pepper to taste.
- Remove from heat and sprinkle with 1 cup shredded Monterey Jack or cheddar cheese. Serve directly from the skillet with tortilla chips for scooping.
Notes
