- 1 yellow onion (large, finely chopped)

- 0.75 teaspoon red chili powder

- 1.5 cup green peas (frozen)
- 0.5 cup water
- 0.25 cup fresh cilantro (chopped)
- 14 whole wheat rotis (store-bought)
- 1 cucumber (large, diced)
- 1 red onion (small, thinly sliced)
- 1 tablespoon lime juice
Instructions
- Prepare the quick salad: In a small bowl, combine diced cucumber, thinly sliced red onion, and 2 tablespoons of chopped fresh cilantro. Drizzle with lime juice and a pinch of salt. Set aside.
- Heat the vegetable oil in a large skillet or Dutch oven over medium-high heat. Add the finely chopped yellow onion and cook, stirring frequently, for 3-4 minutes until softened.
- Add the grated ginger and minced garlic to the skillet and cook for 1 minute more until fragrant.
- Add the ground beef to the skillet. Break it apart with a spoon and cook for 5-7 minutes, until browned. Drain any excess fat.
- Stir in the ground turmeric, ground cumin, ground coriander, red chili powder, and the salt. Cook for 1 minute, stirring constantly, until aromatic.
- Add the frozen green peas and 1/2 cup water. Bring to a simmer, then cover and cook for 3-4 minutes, or until peas are tender and sauce has slightly thickened.
- Stir in the remaining 2 tablespoons of fresh cilantro. While the kheema finishes, warm the store-bought rotis according to package directions, typically on a hot skillet for 30 seconds per side.
- Serve the hot spiced ground beef kheema with warm roti and the fresh cucumber-onion salad on the side.
Notes
For even faster cooking, ensure all vegetables are pre-chopped. Using lean ground beef prevents excessive fat from needing to be drained, saving time.
