Spiced Ground Beef Bowls with Pico

  1. Cook the 2 cups of white rice according to package directions. Keep warm.
  2. While rice cooks, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground beef, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Cook, breaking up the meat with a spoon, until browned, about 5-7 minutes. Drain excess fat.
  3. Add the diced yellow onion and green bell pepper to the skillet with the beef. Sauté for 3-4 minutes until softened. Stir in the minced garlic, chili powder, ground cumin, and dried oregano; cook for 1 minute more until fragrant.
  4. Stir in the rinsed and drained black beans, drained corn, and beef broth. Bring to a simmer and cook for 2-3 minutes, allowing flavors to meld. Season with remaining 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
  5. Meanwhile, combine the diced Roma tomatoes, finely diced red onion, and chopped fresh cilantro in a small bowl to make the quick pico.
  6. Serve the ground beef and bean mixture over the white rice, topped with a spoonful of quick pico.

Notes

You can add a dash of your favorite hot sauce to the ground beef mixture for extra flavor if desired.
