  1. Heat 1 tablespoon of olive oil in a large skillet or non-stick pan over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and cooked through, about 7-8 minutes. Drain any excess fat.
  2. Stir in the chili powder, ground cumin, garlic powder, salt, and black pepper. Cook for 1 minute more, stirring constantly, until fragrant.
  3. Add the rinsed and drained black beans and frozen corn to the skillet. Cook for 3-5 minutes, stirring occasionally, until the beans and corn are heated through.
  4. To assemble the bowls, divide the cooked white rice among four serving bowls. Top each with the spiced ground beef mixture, shredded romaine lettuce, and optional chopped fresh cilantro.
  5. Serve immediately with salsa, if desired.

Notes

For even quicker preparation, use pre-cooked microwaveable rice. Any remaining bowls store well in the refrigerator for up to 3 days; add fresh lettuce and salsa just before serving.
