Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef (85/15 lean)
- 1 teaspoon chili powder
- 0.5 teaspoon ground cumin
- 0.5 teaspoon garlic powder
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 1 can black beans (15 ounces, rinsed and drained)
- 1 cup frozen corn (frozen)
- 2 cup white rice (cooked)
- 2 cup romaine lettuce (shredded)
- 0.25 cup fresh cilantro (chopped)
- 0.5 cup salsa
Instructions
- Heat 1 tablespoon of olive oil in a large skillet or non-stick pan over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and cooked through, about 7-8 minutes. Drain any excess fat.
- Stir in the chili powder, ground cumin, garlic powder, salt, and black pepper. Cook for 1 minute more, stirring constantly, until fragrant.
- Add the rinsed and drained black beans and frozen corn to the skillet. Cook for 3-5 minutes, stirring occasionally, until the beans and corn are heated through.
- To assemble the bowls, divide the cooked white rice among four serving bowls. Top each with the spiced ground beef mixture, shredded romaine lettuce, and optional chopped fresh cilantro.
- Serve immediately with salsa, if desired.
Notes
For even quicker preparation, use pre-cooked microwaveable rice. Any remaining bowls store well in the refrigerator for up to 3 days; add fresh lettuce and salsa just before serving.
