- 1 can chickpeas (rinsed and drained)
- 1 sweet potato (large, peeled and cubed)
- 2 carrots (peeled and sliced)
- 2 cup vegetable broth
- 0.5 cup dried apricots (chopped)
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 1 cup couscous (uncooked)
- 1.5 cup hot water or vegetable broth (for couscous)
- 2 tablespoon fresh parsley (chopped, for garnish)
Instructions
- Heat 1 tablespoon olive oil in a large pot or Dutch oven over medium heat. Add the chopped yellow onion and cook until softened, about 5-7 minutes.
- Stir in the minced garlic, grated fresh ginger, ground cumin, ground coriander, ground turmeric, smoked paprika, and cayenne pepper (if using). Cook for 1 minute until fragrant.
- Add the diced tomatoes, rinsed and drained chickpeas, cubed sweet potato, sliced carrots, vegetable broth, chopped dried apricots, salt, and black pepper. Stir well to combine.
- Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 30-35 minutes, or until the vegetables are tender, stirring occasionally.
- About 10 minutes before the tagine is ready, prepare the couscous. Place 1 cup uncooked couscous in a heatproof bowl. Pour 1 1/2 cups hot water or vegetable broth over it, ensuring it's just covered. Cover the bowl with a plate or plastic wrap and let it stand for 5-7 minutes until the liquid is absorbed. Fluff with a fork.
- Taste the tagine and adjust seasonings as needed. Serve the Spiced Chickpea-Vegetable Tagine hot over fluffy couscous, garnished with fresh chopped parsley if desired.
Notes
For a deeper flavor, you can let the tagine simmer for longer on low heat.
