  1. In a large bowl, mash the 15 ounce can of drained and rinsed black beans with a fork until mostly smooth, but still a little chunky.
  2. Add 1/2 finely diced yellow onion, 1/2 finely diced red bell pepper, 2 cloves minced garlic, 1/4 cup rolled oats, 1 large egg, 1 teaspoon chili powder, 1/2 teaspoon ground cumin, 1/4 teaspoon garlic powder, and 1/4 teaspoon black pepper to the mashed beans. Mix thoroughly to combine.
  3. Form the mixture into 3-4 patties (about 1/2 cup each).
  4. Heat 1 tablespoon olive oil in a large non-stick skillet over medium heat. Carefully place the patties in the skillet and cook for 4-6 minutes per side, until golden brown and heated through.
  5. While patties cook, in a separate small pan, quickly sauté 1 large sliced green bell pepper with a splash of water for 3-5 minutes until tender-crisp.
  6. Serve the spiced black bean patties wrapped in large lettuce leaves with a side of sautéed green bell pepper.

Notes

Ensure your mayonnaise and mustard are low sodium and sugar-free to maintain dietary compliance. Patties can be made ahead and stored in the fridge.
