- 0.25 cup yellow onion (chopped)

- 0.5 teaspoon salt (divided)
- 0.25 teaspoon black pepper
- 2 tablespoon olive oil
- 4 burger buns
- 1 package frozen seasoned fries (16 ounces)
- 1 package coleslaw mix (10 ounces)
- 0.25 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 teaspoon sugar
- 2 tablespoon ketchup (for serving)
Instructions
- Preheat oven to 400°F. Spread the frozen seasoned fries in a single layer on a baking sheet. Bake according to package directions, typically 15-20 minutes, flipping halfway through.
- In a large bowl, mash the rinsed and drained black beans with a fork until mostly broken down but still retaining some texture.
- Add the panko breadcrumbs, large egg, chopped yellow onion, chili powder, ground cumin, smoked paprika, garlic powder, 1/4 teaspoon salt, and 1/4 teaspoon black pepper to the mashed black beans. Mix well until combined.
- Form the mixture into 4-5 patties. Heat 2 tablespoons olive oil in a large skillet over medium heat.
- Cook the black bean patties for 4-6 minutes per side, until browned and heated through. While burgers cook, prepare the coleslaw.
- In a medium bowl, whisk together the mayonnaise, apple cider vinegar, 1 teaspoon sugar, and remaining 1/4 teaspoon salt. Add the coleslaw mix and toss to coat evenly.
- Serve the black bean burgers on burger buns with a generous spoonful of coleslaw and a side of the crispy fries, with ketchup if desired.
Notes
Leftover patties can be refrigerated for up to 3 days and reheated in a skillet or microwave.
