Ingredients
- 1 tablespoon olive oil
- 1 yellow onion (large, diced)
- 2 clove garlic (minced)
- 1 red bell pepper (diced)
- 1 can diced tomatoes (undrained)
- 2 can black beans (rinsed and drained)
- 1 cup frozen corn
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 0.5 teaspoon smoked paprika
- 0.75 teaspoon kosher salt
- 0.25 teaspoon black pepper (freshly ground)
- 2 cup brown rice (uncooked)
- 4 cup water
- 2 avocados (ripe, diced)
- 1 lime (juiced)
- 0.25 cup fresh cilantro (chopped)
- 3 ounce plantain chips
Instructions
- In a large pot or deep skillet, heat olive oil over medium heat. Add diced yellow onion and red bell pepper, and cook until softened, about 5-7 minutes.
- Stir in minced garlic, chili powder, ground cumin, and smoked paprika. Cook for 1 minute until fragrant.
- Add undrained diced tomatoes, rinsed and drained black beans, frozen corn, kosher salt, and black pepper. Bring the mixture to a simmer, then reduce heat to low and cook for 10-15 minutes, allowing flavors to meld.
- Meanwhile, prepare the brown rice. Combine uncooked brown rice and water in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 40-45 minutes, or until all water is absorbed and rice is tender. Fluff with a fork.
- For the avocado-lime topping, gently toss diced avocados with fresh lime juice and chopped fresh cilantro.
- To serve, spoon a generous portion of brown rice into bowls. Top with the spiced black bean and corn mixture. Garnish with the avocado-lime topping and serve with plantain chips.
Notes
You can prepare the black bean mixture and brown rice ahead of time for quicker assembly during the week. Just reheat gently.
