  1. Heat 1 tablespoon olive oil in a large skillet or wok over medium-high heat. Add the extra lean ground beef and cook, breaking it apart with a spoon, until browned. Drain any excess fat.
  2. Add ground cumin, smoked paprika, dried oregano, 1/4 teaspoon salt, and 1/4 teaspoon black pepper to the beef. Stir well and cook for 1 minute until fragrant. Stir in the ground flax seeds.
  3. Push the beef to one side of the skillet. Add the remaining 1 tablespoon olive oil to the empty side, then add the diced red bell peppers and green bell peppers. Sauté for 5-7 minutes until slightly softened.
  4. Stir in the riced cauliflower and cook for 5 minutes, stirring occasionally, until tender. Add the fresh spinach and cook until just wilted, about 2-3 minutes.
  5. Remove from heat and stir in the lime juice and fresh cilantro. Serve immediately in bowls. Store remaining portions in airtight containers.

Notes

Ensure all spices used are low-FODMAP certified or free from onion/garlic powder. Leftovers reheat well in the microwave.
