Ingredients
- 1.75 pound beef sirloin (thinly sliced against the grain)
- 2 tablespoon olive oil
- 2 yellow onions (large, sliced)
- 6 clove garlic (minced)
- 2 tablespoon fresh ginger (grated)
- 2 tablespoon paprika
- 1.5 teaspoon ground cumin
- 1 teaspoon ground coriander
- 0.75 teaspoon cayenne pepper
- 1.5 teaspoon salt
- 0.75 teaspoon black pepper (ground)
- 2.25 cup quick-cook couscous
- 2.25 cup water (boiling)
- 2 tablespoon fresh parsley (chopped)
Instructions
- Pat the thinly sliced beef sirloin dry with paper towels. In a large skillet or wok, heat 1 tablespoon of olive oil over high heat until shimmering. Add half of the beef and sear quickly for 2-3 minutes until browned, then remove to a plate. Repeat with the remaining beef and 1/2 tablespoon olive oil.
- Add the remaining 1/2 tablespoon olive oil to the skillet, reduce heat to medium-high. Add the sliced yellow onions and cook for 3-4 minutes until softened.
- Add the minced garlic and grated fresh ginger to the skillet and cook for 1 minute until fragrant. Stir in paprika, ground cumin, ground coriander, cayenne pepper, salt, and black pepper. Cook for 30 seconds, stirring.
- Return the seared beef to the skillet and toss to coat with the spices and onions. Cook for another 2-3 minutes, ensuring the beef is cooked through but still tender.
- While the beef is cooking, prepare the quick-cook couscous: In a heatproof bowl, combine couscous with 2 1/4 cups boiling water or vegetable broth. Cover and let stand for 5 minutes. Fluff with a fork.
- Serve the Spiced Beef Tibs immediately with the quick couscous. Garnish with fresh parsley if desired.
Notes
Ensure beef is sliced very thinly for quick cooking. Do not overcrowd the pan when searing the beef to achieve a good sear rather than steaming.
