  1. Thoroughly scrub sweet potatoes. Prick them several times with a fork. Microwave on high for 5-7 minutes per potato, or until very tender. (Alternatively, bake in a 400°F oven for 45-60 minutes).
  2. While sweet potatoes cook, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add ground beef, season with 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1 teaspoon chili powder, and 1/2 teaspoon ground cumin. Cook, breaking up the meat with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
  3. Add diced yellow onion and diced bell pepper to the skillet with the beef. Cook for 5 minutes, until vegetables are tender-crisp.
  4. Once sweet potatoes are cooked, slice them open lengthwise down the middle (but not all the way through). Fluff the insides with a fork.
  5. Stuff each sweet potato generously with the spiced beef and vegetable mixture. Top with shredded cheddar cheese, plain Greek yogurt (or sour cream), and chopped fresh cilantro, if desired.

Notes

For faster cooking, use a pre-chopped mirepoix mix (celery, carrot, onion) instead of dicing fresh vegetables. This dish reheats well.
