  1. In a small bowl, combine softened cream cheese, chopped fresh parsley, dried mint, ground cumin, garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix well.
  2. Lay beef round steak slices flat. Spread a thin layer of the cream cheese mixture evenly over each slice. Tightly roll each slice of beef and secure with kitchen twine or toothpicks.
  3. Preheat oven to 375 degrees Fahrenheit (190 degrees Celsius). Heat olive oil in a large oven-safe skillet over medium-high heat. Sear beef roulades on all sides until golden brown, about 2-3 minutes per side. Remove from skillet.
  4. Pour beef broth into the skillet, scraping up any browned bits. Return roulades to the skillet. Cover and braise in the preheated oven for 20-25 minutes, or until beef is tender.
  5. While beef braises, prepare green bean bundles: Divide trimmed fresh green beans into 6 equal bundles (about 12-15 beans each). Wrap each bundle with one slice of thinly cut bacon and secure with a toothpick.
  6. Arrange green bean bundles on a separate baking sheet. Roast alongside the beef roulades for the last 15-20 minutes of cooking, or until bacon is crispy and green beans are tender-crisp.
  7. Remove roulades from oven, let rest for a few minutes before slicing (if desired). Discard twine/toothpicks. Serve sliced beef roulade with green bean bundles. Drizzle with pan sauce from the skillet.

Notes

To flatten the beef, you can place it between two pieces of plastic wrap and pound with a meat mallet or rolling pin. For extra flavor, brown the bacon in the skillet before searing the beef, then use the bacon fat to cook the roulades.
