- 1 sweet potato (large, scrubbed and cut into 1/2-inch wedges)
- 5 ounce fresh spinach
- 1 clove garlic (minced)
Instructions
- Preheat oven to 425 degrees Fahrenheit. On a baking sheet, toss sweet potato wedges with 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Spread in a single layer and roast for 15-20 minutes, flipping halfway, until tender and lightly browned.
- While sweet potatoes roast, combine ground beef, ground coriander, ground nutmeg, ground cloves, remaining 1/2 teaspoon salt, and 1/4 teaspoon black pepper in a medium bowl. Mix gently to combine, then form into 4 patties.
- Heat remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Add beef patties and cook for 4-5 minutes per side, or until cooked through to desired doneness. Remove patties from skillet and set aside.
- Add minced garlic to the same skillet (add a splash more olive oil if needed) and sauté for 30 seconds until fragrant. Add fresh spinach and cook, tossing frequently, for 2-3 minutes until wilted.
- Serve the spiced beef patties with the roasted sweet potato wedges and sautéed spinach.
Notes
For crispier sweet potatoes, ensure they are in a single layer on the baking sheet and not overcrowded. If your ground beef is leaner, you might need a bit more olive oil for the patties.
