Ingredients
- 1 teaspoon olive oil
- 1.5 pound ground beef (93% lean)
- 1 yellow onion (diced)
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 0.5 teaspoon garlic powder

- 0.5 cup tomato sauce (low sodium)
- 0.25 cup water
- 0.5 teaspoon kosher salt
- 0.25 teaspoon black pepper
- 1 head Bibb lettuce (separated into leaves)
- 1 can black beans (rinsed and drained)
- 1 cup frozen corn (thawed)
- 2 tablespoon lime juice
- 0.25 cup fresh cilantro (chopped)
Instructions
- Heat 1 teaspoon olive oil in a large skillet over medium-high heat. Add 1 1/2 pounds 93% lean ground beef and 1 diced yellow onion; cook, breaking up the beef, until browned and cooked through, about 6-8 minutes. Drain any excess fat.
- Stir in 1 tablespoon chili powder, 1 teaspoon ground cumin, 1/2 teaspoon garlic powder, and 1/2 teaspoon smoked paprika; cook for 1 minute until fragrant. Add 1/2 cup low-sodium tomato sauce and 1/4 cup water, stirring to combine. Bring to a simmer and cook for 2-3 minutes, allowing sauce to thicken. Season with 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper.
- While beef is cooking, prepare the bean and corn salsa: In a medium bowl, combine 1 can rinsed and drained black beans, 1 cup thawed frozen corn, 2 tablespoons lime juice, and 1/4 cup chopped fresh cilantro (if using). Stir well.
- Serve the spiced beef mixture in separated Bibb lettuce leaves, topped with the black bean and corn salsa.
Notes
If you prefer a little heat, add a pinch of red pepper flakes to the beef with the spices. Leftover beef mixture can be stored for 2-3 days and reheated. The salsa is best fresh but can also be stored separately.
