Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef (80/20 lean)
- 1 yellow onion (medium, chopped)
- 2 clove garlic (minced)
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 15 ounce black beans (rinsed and drained)
- 15 ounce corn (drained)
- 2 cup white rice (uncooked)
- 4 cup water (for rice)
Instructions
- Cook the white rice: Combine 2 cups white rice and 4 cups water in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes or until water is absorbed and rice is tender. Remove from heat and let stand, covered, for 5 minutes.
- While the rice cooks, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the 1 pound ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
- Add the chopped yellow onion to the skillet and cook for 3-4 minutes until softened. Stir in the minced garlic, 1 tablespoon chili powder, 1 teaspoon ground cumin, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Cook for 1 minute until fragrant.
- Stir in the 15 ounce can black beans and 15 ounce can corn. Cook for 5 minutes, allowing flavors to meld and heating through.
- Serve the spiced beef and black bean mixture over the cooked white rice in bowls.
