  1. Heat 2 tablespoons olive oil in a large skillet or Dutch oven over medium-high heat. Add 2 pounds ground beef and cook, breaking it apart with a spoon, until browned. Drain excess fat and set beef aside.
  2. Add 1 large chopped yellow onion to the same skillet and cook until softened, about 5 minutes. Stir in 3 cloves minced garlic and cook for 1 minute until fragrant.
  3. Add 2 medium diced sweet potatoes, 1 large diced red bell pepper, 1 1/2 teaspoons ground cumin, 1 teaspoon paprika, 1/2 teaspoon ground coriander, and 1/4 teaspoon cayenne pepper (if using). Cook, stirring occasionally, for 8-10 minutes until sweet potatoes begin to soften.
  4. Return the cooked ground beef to the skillet. Pour in 1/2 cup beef broth. Bring to a simmer, then reduce heat to medium-low, cover, and cook for 10-15 minutes, or until sweet potatoes are tender.
  5. Season the hash generously with salt and black pepper to taste. Stir to combine.
  6. While the hash cooks, prepare 3 cups white rice according to package directions.
  7. In a small bowl, combine 1/2 cup plain Greek yogurt, 2 tablespoons chopped fresh cilantro, and 1 tablespoon lime juice for the cilantro-lime yogurt. Season lightly with salt.
  8. Serve the Spiced Beef and Sweet Potato Hash over white rice, topped with a dollop of cilantro-lime yogurt.

Notes

This hash is incredibly versatile and reheats well. You can adjust the spices to your family's preference or add some chopped greens like spinach during the last few minutes of cooking.
