Instructions

  1. Heat 1 teaspoon olive oil in a nonstick skillet over medium heat. Add 1/2 cup diced red bell pepper and cook for 2 minutes until tender.
  2. Add 6 ounces soy chorizo to the skillet, breaking it apart with a spatula, and cook for 3 to 4 minutes until thoroughly heated through and fragrant.
  3. Pour in 1 1/2 cups liquid egg whites, 1/4 teaspoon kosher salt, and 1/4 teaspoon black pepper. Gently stir constantly for 2 to 3 minutes until soft curds form and the eggs are cooked through.
  4. Remove the skillet from heat and gently fold in 1/2 cup shredded reduced-fat cheddar cheese until slightly melted.
  5. Warm 2 low-carb flour tortillas in a dry skillet over medium heat for 20 seconds per side until pliable. Divide the soyrizo and egg scramble evenly between the tortillas, top each with 2 tablespoons red salsa, roll tightly into burritos, and slice in half to serve.

Notes

To meal prep, assemble burritos completely, wrap tightly in foil or parchment paper, and refrigerate up to 4 days or freeze up to 1 month. Reheat in a toaster oven or skillet for a crisp exterior.
