Souvlaki-Inspired Chicken Bowls

Marinated chicken breast pieces quickly pan-seared and served over fluffy quinoa with a fresh cucumber and tomato salad, finished with crumbled feta.

  1. In a medium bowl, combine chicken breast cubes with 1 tablespoon olive oil, lemon juice, minced garlic, dried oregano, 1/2 teaspoon kosher salt, and 1/8 teaspoon black pepper. Toss to coat and let marinate for at least 10 minutes (or up to 30 minutes if time allows).
  2. While chicken marinates, prepare quick-cook quinoa according to package directions.
  3. Heat remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Add marinated chicken and cook for 5-7 minutes, stirring occasionally, until cooked through and lightly browned.
  4. In a small bowl, combine diced cucumber and diced Roma tomatoes. Season with remaining 1/4 teaspoon kosher salt and 1/8 teaspoon black pepper.
  5. Divide cooked quinoa among serving bowls. Top with cooked chicken, cucumber and tomato salad, and crumbled feta cheese. Garnish with fresh parsley, if desired. Serve immediately.

Notes

For a creamier bowl, a dollop of store-bought tzatziki or a simple yogurt-cucumber sauce makes a great addition. You can also quickly broil the chicken for an extra charred flavor.
