Ingredients
- 2 pound chicken breast (boneless, skinless, cut into 1-inch cubes)
- 2 tablespoon olive oil
- 0.25 cup lemon juice (freshly squeezed)
- 2 clove garlic (minced)
- 1 teaspoon dried oregano
- 0.75 teaspoon kosher salt
- 0.25 teaspoon black pepper (freshly ground)
- 1.5 cup quick-cook quinoa (uncooked)
- 1 cucumber (large, diced)
- 2 Roma tomatoes (diced)
- 0.5 cup feta cheese (crumbled)
- 0.25 cup fresh parsley (chopped)
Instructions
- In a medium bowl, combine chicken breast cubes with 1 tablespoon olive oil, lemon juice, minced garlic, dried oregano, 1/2 teaspoon kosher salt, and 1/8 teaspoon black pepper. Toss to coat and let marinate for at least 10 minutes (or up to 30 minutes if time allows).
- While chicken marinates, prepare quick-cook quinoa according to package directions.
- Heat remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Add marinated chicken and cook for 5-7 minutes, stirring occasionally, until cooked through and lightly browned.
- In a small bowl, combine diced cucumber and diced Roma tomatoes. Season with remaining 1/4 teaspoon kosher salt and 1/8 teaspoon black pepper.
- Divide cooked quinoa among serving bowls. Top with cooked chicken, cucumber and tomato salad, and crumbled feta cheese. Garnish with fresh parsley, if desired. Serve immediately.
Notes
For a creamier bowl, a dollop of store-bought tzatziki or a simple yogurt-cucumber sauce makes a great addition. You can also quickly broil the chicken for an extra charred flavor.
