  1. Heat the olive oil in a large skillet over medium-high heat. Add the diced yellow onion, red bell pepper, and zucchini. Sauté for 5-7 minutes until the vegetables begin to soften. Add the minced garlic during the last minute of cooking.
  2. Push the vegetables to one side of the skillet. Add the lean ground turkey to the empty side and break it apart with a spoon. Cook for 5-7 minutes, stirring occasionally, until browned. Drain any excess fat if necessary.
  3. Stir in the low-sodium taco seasoning, 1/2 cup water, and black pepper. Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 5 minutes, allowing the flavors to meld.
  4. Remove from heat and stir in the fresh lime juice. Taste and adjust seasoning as desired. Serve immediately over beds of fresh baby spinach. Garnish with chopped fresh cilantro, if using.
  5. Portion remaining servings into airtight containers for easy meal prep later in the week.

Notes

Leftovers can be stored in the refrigerator for up to 3 days and reheated in the microwave or on the stovetop.
