  1. Cook the instant brown rice according to package directions, which typically takes 5 minutes of active cooking time.
  2. While rice cooks, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 1 pound ground turkey and 1/2 cup diced bell pepper. Cook, breaking up the turkey, until browned and cooked through, about 5-7 minutes.
  3. Drain any excess grease. Stir in 1 teaspoon chili powder, 1/2 teaspoon ground cumin, 1/2 teaspoon garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Cook for 1 minute more until fragrant.
  4. Add 1 can rinsed and drained black beans and 1 cup thawed frozen corn to the skillet. Cook for 2-3 minutes, stirring occasionally, until heated through.
  5. Assemble the bowls: Divide the cooked instant brown rice among 4 bowls. Top with the turkey and bean mixture. Garnish with optional 1/2 cup chopped fresh cilantro, 1/2 cup salsa, and 1/2 cup sour cream, if desired.
