  1. Heat 1 tablespoon olive oil in a large non-stick skillet or wok over medium-high heat.
  2. Add 1 pound 99% lean ground turkey breast to the skillet and cook, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess liquid.
  3. Push the turkey to one side of the skillet. Add 1 medium yellow onion, 1 green bell pepper, 1 red bell pepper, and 2 cloves garlic to the other side. Sauté vegetables for 3-5 minutes until slightly softened.
  4. Stir the cooked turkey and vegetables together. Add 1 (15 ounce) can black beans, 1 tablespoon chili powder, 1 teaspoon ground cumin, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Stir well to combine all ingredients.
  5. Continue to cook for 2-3 minutes, allowing the flavors to meld and the beans to heat through.
  6. Serve the skillet mixture over 4 cups shredded romaine lettuce, topped with 1/4 cup fresh cilantro and a squeeze of 2 tablespoons lime juice.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat gently in the microwave or on the stovetop.
