- 16 ounce extra-firm tofu (pressed and crumbled)
- 15 ounce black beans (rinsed and drained)

- 0.5 teaspoon garlic powder
- 0.25 teaspoon turmeric powder
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper (ground)
- 4 flour tortillas
- 2 tablespoon fresh cilantro (chopped)
Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 0.5 each diced yellow onion and 1 each diced red bell pepper. Sauté until vegetables are tender-crisp, about 5 minutes.
- Add 1 block crumbled extra-firm tofu and 1 can rinsed and drained black beans to the skillet. Cook, stirring occasionally, for 5-7 minutes until the tofu is lightly browned.
- Stir in 1 teaspoon chili powder, 1/2 teaspoon smoked paprika, 1/2 teaspoon garlic powder, and 1/4 teaspoon turmeric powder. Cook for another 1-2 minutes, allowing the spices to become fragrant. Season with salt and black pepper to taste.
- While the scramble is cooking, warm 4 each flour tortillas according to package directions.
- Serve the hearty tofu scramble immediately with warm flour tortillas. Garnish with 2 tablespoons chopped fresh cilantro if desired.
Notes
The cooked tofu scramble mixture can be portioned and frozen for future quick meals. Thaw overnight and reheat in the microwave or on the stovetop. Prepare fresh tortillas when serving.
