- 1 yellow onion (sliced)
- 1 red bell pepper (sliced)

- 2 tablespoon lime juice
- 1 can black beans (rinsed and drained)
- 2.5 cup white rice (cooked)
- 2 tablespoon fresh cilantro (chopped)
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook, stirring occasionally, until lightly browned, about 4-5 minutes.
- Sprinkle the chicken with cumin, chili powder, smoked paprika, salt, and black pepper. Stir to coat and cook for 1 minute more.
- Add the sliced yellow onion and red bell pepper to the skillet. Cook, stirring frequently, until the vegetables start to soften, about 3-4 minutes.
- Pour in the chicken broth and lime juice, scraping up any browned bits from the bottom of the skillet. Bring to a simmer and cook for 2 minutes.
- Stir in the rinsed and drained black beans. Continue to cook for another 2-3 minutes, allowing the sauce to thicken slightly and flavors to meld. Taste and adjust seasoning if needed.
- While the skillet meal is cooking, prepare the white rice according to package directions. Serve the chicken mixture over the warm rice, garnished with fresh cilantro if desired.
