  1. Heat 1 tablespoon olive oil in a large skillet or deep pan over medium-high heat. Add the diced yellow onion and cook for 3 minutes, until softened.
  2. Stir in the minced garlic and ground turkey. Break up the turkey with a spoon and cook for 5-7 minutes, until browned, draining any excess fat if necessary.
  3. Add 1 1/2 teaspoons smoked paprika, 1 teaspoon ground cumin, 1/2 teaspoon dried oregano, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper to the skillet. Stir well to coat the turkey.
  4. Add the diced sweet potato and 3/4 cup chicken broth. Bring to a simmer, then reduce heat to medium-low, cover, and cook for 8-10 minutes, or until the sweet potatoes are tender.
  5. Uncover the skillet and stir in the fresh spinach. Cook for 2-3 minutes, stirring occasionally, until the spinach has wilted. Serve immediately.
