Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef
- 0.5 yellow onion (medium, finely diced)
- 1 package taco seasoning mix
- 0.25 cup water
- 8 tostada shells
- 2 cup iceberg lettuce (shredded)
- 1 cup Roma tomatoes (diced)
- 1 cup Mexican blend cheese (shredded)
- 0.5 cup sour cream
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add 1 pound of ground beef and 1/2 of a finely diced yellow onion. Cook, breaking apart the beef, until browned and onion is softened, about 6-8 minutes. Drain any excess grease.
- Stir in 1 packet of taco seasoning mix and 1/4 cup of water. Bring to a simmer and cook for 3-5 minutes, stirring occasionally, until the liquid has mostly absorbed and the beef is well-seasoned.
- While the beef simmers, prepare your toppings: shred 2 cups of iceberg lettuce, dice 1 cup of Roma tomatoes, and shred 1 cup of Mexican blend cheese.
- To assemble, lay out 8 tostada shells. Spoon a generous amount of the seasoned ground beef onto each shell. Top with shredded lettuce, diced tomatoes, and shredded Mexican blend cheese. Add a dollop of sour cream if desired.
- Serve immediately.
Notes
Have all your toppings prepped before you start cooking the beef, as this dish comes together very quickly once the beef is ready. Store leftover beef mixture and toppings separately for best freshness.
