  1. Cook brown rice according to package directions using 2 cups of water or chicken broth. Set aside.
  2. While rice cooks, heat olive oil in a large skillet over medium-high heat. Add cubed chicken breast seasoned with cumin, chili powder, smoked paprika, salt, and black pepper. Cook until chicken is no longer pink and browned, about 5-7 minutes.
  3. Add diced bell pepper to the skillet and cook for 3-4 minutes until slightly softened.
  4. Stir in the rinsed black beans, kidney beans, and frozen corn. Cook for another 3-5 minutes, until heated through.
  5. To assemble the bowls, divide the cooked brown rice among four bowls. Top with the chicken and bean mixture. Sprinkle with fresh cilantro before serving.

Notes

Leftover bowls can be stored in individual airtight containers for easy grab-and-go lunches or dinners. Reheat in the microwave until warm. For a touch of freshness, you can add a squeeze of lime juice right before serving.
