Ingredients
- 2 pound ground turkey (lean)
- 2 tablespoon taco seasoning
- 1 tablespoon olive oil
- 2 can black beans (15 oz can, rinsed and drained)
- 2 can sweet corn (15 oz can, drained)
- 8 ounce shredded cheddar cheese
- 1 jar mild salsa
- 1 pound mini sweet peppers (halved and seeded)
Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 2 pounds lean ground turkey and cook for 7 to 8 minutes, breaking it apart with a spoon until thoroughly cooked.
- Stir in 2 tablespoons taco seasoning and 1/3 cup water. Simmer for 2 to 3 minutes until the liquid reduces and coats the meat. Remove from heat and allow to cool.
- In a bowl, toss together 2 cans drained black beans and 2 cans drained sweet corn.
- Divide the corn and bean mixture evenly across 8 bento boxes.
- Add the seasoned turkey, 8 ounces shredded cheddar cheese, halved mini sweet peppers, and portions of mild salsa into the remaining compartments of each container.
Notes
Enjoy cold like a taco salad dip box, or remove peppers and salsa before reheating the turkey and beans.
