Ingredients
- 1.5 pound beef sirloin (lean, cut into thin strips)
- 2 tablespoon olive oil
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 0.5 teaspoon smoked paprika
- 0.5 teaspoon garlic powder
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 1 bell pepper (large, sliced)
- 1 red onion (small, sliced)
- 1 can black beans (15-ounce, rinsed and drained)
- 1 cup corn kernels
- 0.25 cup fresh cilantro (chopped)
- 1 lime (juiced)
Instructions
- In a bowl, combine chili powder, ground cumin, smoked paprika, garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Toss the beef sirloin strips with this spice mixture until evenly coated.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned beef sirloin in a single layer and cook for 2-3 minutes per side until browned. Remove beef from the skillet and set aside.
- Add the remaining 1 tablespoon of olive oil to the same skillet. Add the sliced bell pepper and sliced red onion. Sauté for 5-7 minutes until vegetables are tender-crisp.
- While the vegetables cook, combine the rinsed black beans, corn kernels, chopped fresh cilantro, and lime juice in a small bowl. Season with remaining 1/2 teaspoon salt and 1/4 teaspoon black pepper. This is your black bean salsa.
- Return the cooked beef sirloin to the skillet with the sautéed vegetables. Toss everything together for 1-2 minutes to heat through.
- Serve the steak and vegetable mixture alongside the fresh black bean salsa.
Notes
To further reduce sodium, use no-salt-added black beans and reduce added salt. Serve with a side of cauliflower rice for an even lower-carb option.
