- 1 tablespoon vegetable oil
- 1 pound ground beef
- 1 yellow onion (medium, chopped)
- 1 can black beans (15-ounce, rinsed and drained)
- 1 cup frozen corn
- 2 tablespoon taco seasoning mix
- 0.25 cup water
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 8 flour tortillas (small)
Instructions
- Heat vegetable oil in a large skillet over medium-high heat. Add ground beef and yellow onion, breaking up the beef with a spoon. Cook until beef is browned and onion is softened, about 5-7 minutes. Drain any excess fat.
- Stir in black beans, frozen corn, taco seasoning mix, water, salt, and black pepper. Bring to a simmer and cook for 5-7 minutes, stirring occasionally, until flavors meld and liquid is mostly absorbed.
- While the skillet mixture simmers, warm the flour tortillas according to package directions.
- Serve the Southwest skillet ground beef hot with warm flour tortillas for wrapping.
