Instructions
- In a medium bowl, toss the chicken strips with chili powder, ground cumin, smoked paprika, dried oregano, cayenne pepper (if using), salt, and black pepper. Stir in 1 tablespoon of lime juice.
- Heat 1 tablespoon olive oil in a large skillet or cast-iron pan over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, stirring occasionally, until cooked through and lightly browned. Remove chicken from the skillet and set aside.
- Add the sliced bell peppers and yellow onion to the same skillet. Cook for 5-7 minutes, stirring frequently, until vegetables are tender-crisp. Add the remaining 1 tablespoon of lime juice and cook for 1 minute more.
- Return the cooked chicken to the skillet with the vegetables and toss to combine. Season with additional salt and pepper if needed.
- Serve the fajita mixture in Romaine lettuce leaves, topped with sliced avocado and chopped fresh cilantro, if desired.
Notes
Marinating the chicken for 10-15 minutes while you chop the vegetables can enhance the flavor.
