  1. In a medium bowl, toss the chicken strips with chili powder, ground cumin, smoked paprika, dried oregano, cayenne pepper (if using), salt, and black pepper. Stir in 1 tablespoon of lime juice.
  2. Heat 1 tablespoon olive oil in a large skillet or cast-iron pan over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, stirring occasionally, until cooked through and lightly browned. Remove chicken from the skillet and set aside.
  3. Add the sliced bell peppers and yellow onion to the same skillet. Cook for 5-7 minutes, stirring frequently, until vegetables are tender-crisp. Add the remaining 1 tablespoon of lime juice and cook for 1 minute more.
  4. Return the cooked chicken to the skillet with the vegetables and toss to combine. Season with additional salt and pepper if needed.
  5. Serve the fajita mixture in Romaine lettuce leaves, topped with sliced avocado and chopped fresh cilantro, if desired.

Notes

Marinating the chicken for 10-15 minutes while you chop the vegetables can enhance the flavor.
