  1. First, prepare the rice: In a small saucepan, combine the white rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes, or until all the water is absorbed. Alternatively, use a rice cooker or instant rice following package directions. While the rice cooks, prepare the skillet beef.
  2. While the rice is cooking, heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned, about 8-10 minutes. Drain any excess fat.
  3. Add the diced yellow onion, green bell pepper, and red bell pepper to the skillet with the beef. Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened.
  4. Stir in the diced tomatoes (undrained), low-sodium gluten-free beef broth, chili powder, ground cumin, dried oregano, salt, and black pepper. Bring the mixture to a simmer and cook for 5 minutes, allowing the flavors to meld.
  5. Once the rice is cooked, fluff it with a fork. Stir in the fresh lime juice and chopped fresh cilantro.
  6. Serve the skillet beef mixture over the lime cilantro rice.
