Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef (90/10 lean)
- 1 yellow onion (medium, diced)
- 0.5 green bell pepper (diced)
- 0.5 red bell pepper (diced)
- 1 can diced tomatoes (undrained)
- 0.5 cup low-sodium gluten-free beef broth
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 0.5 teaspoon dried oregano
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 1 cup white rice (uncooked)
- 1.5 cup water
- 1 tablespoon lime juice
- 2 tablespoon fresh cilantro (chopped)
Instructions
- First, prepare the rice: In a small saucepan, combine the white rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes, or until all the water is absorbed. Alternatively, use a rice cooker or instant rice following package directions. While the rice cooks, prepare the skillet beef.
- While the rice is cooking, heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned, about 8-10 minutes. Drain any excess fat.
- Add the diced yellow onion, green bell pepper, and red bell pepper to the skillet with the beef. Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened.
- Stir in the diced tomatoes (undrained), low-sodium gluten-free beef broth, chili powder, ground cumin, dried oregano, salt, and black pepper. Bring the mixture to a simmer and cook for 5 minutes, allowing the flavors to meld.
- Once the rice is cooked, fluff it with a fork. Stir in the fresh lime juice and chopped fresh cilantro.
- Serve the skillet beef mixture over the lime cilantro rice.
Notes
Adjust chili powder and cumin to your preferred mildness level. For even faster cooking, use instant rice or pre-cooked microwaveable rice.
