Southwest Skillet Baked Eggs

  1. Preheat oven to 375°F (190°C).
  2. In a large oven-safe skillet (like cast iron), heat the olive oil over medium heat. Add the chopped yellow onion and diced bell pepper and cook for 5-7 minutes until softened.
  3. Stir in the minced garlic, diced tomatoes (undrained), rinsed black beans, frozen corn, ground cumin, smoked paprika, chipotle powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Simmer for 5 minutes, stirring occasionally, until slightly thickened.
  4. Make 5 small wells in the black bean mixture using the back of a spoon. Carefully crack one egg into each well.
  5. Transfer the skillet to the preheated oven. Bake for 8-12 minutes, or until the egg whites are set but the yolks are still runny (or to your desired doneness).
  6. If desired, sprinkle with shredded cheddar cheese during the last 2 minutes of baking. Garnish with fresh chopped cilantro before serving.

Notes

Serve directly from the skillet for a rustic presentation. You can add a dollop of sour cream or a slice of avocado for extra richness.
