Instructions
- Season the 4 ounces small pieces of chicken breast with 1/2 teaspoon ground cumin, 1/4 teaspoon salt, and 1/8 teaspoon black pepper.
- Heat 1 tablespoon olive oil in a medium skillet over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, until cooked through and lightly browned.
- In a small bowl, whisk together 1 tablespoon fresh lime juice and 1 tablespoon chopped fresh cilantro to make a quick dressing.
- In a serving bowl, combine the cooked chicken, 1/2 cup rinsed and drained black beans, 1/2 cup drained canned corn, and 1/4 cup halved cherry tomatoes.
- Drizzle the cilantro-lime dressing over the bowl ingredients and toss gently to combine. Serve immediately.
