Ingredients
- 8 ounce chicken breast (cooked, diced)
- 1 package brown rice (microwaveable package)
- 1 can black beans (rinsed and drained)
- 1 can whole kernel corn (drained)
- 0.5 cup mild salsa
- 0.5 cup Monterey Jack cheese (shredded)
- 2 tablespoon fresh cilantro (chopped)
- 1 avocado (sliced)
- 1 lime (halved, for serving)
- 2 cup mixed greens salad (bagged)
Instructions
- In two microwave-safe bowls, divide the cooked chicken breast, black beans, and corn evenly.
- Microwave each bowl on high for 2-3 minutes, until warmed through.
- While warming, prepare the microwave brown rice according to package directions, typically 90 seconds to 2 minutes per pouch.
- Add half of the cooked brown rice to each warmed bowl.
- Top each bowl with half of the mild salsa and shredded Monterey Jack cheese.
- Microwave for an additional 1 minute, or until the cheese is melted.
- Garnish with fresh chopped cilantro and avocado slices. Serve with a lime wedge for squeezing and the side salad.
Notes
Feel free to add a dash of your favorite hot sauce for extra kick! This bowl can also be prepped ahead and heated for quick lunches.
