Instructions

  1. Heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat.
  2. Add 1 pound ground chicken breast, 1 teaspoon mild chili powder, 1 teaspoon ground cumin, 1/2 teaspoon garlic powder, and 1/4 teaspoon salt. Sauté for 5 minutes, breaking the chicken into crumbles, until cooked through.
  3. Add 12 ounces riced cauliflower, 1 diced zucchini, 1 diced red bell pepper, and 1 can rinsed black beans to the skillet. Cook for 3 to 4 minutes until the vegetables are tender-crisp.
  4. Push the chicken and vegetable mixture to one side of the skillet. Pour 1 1/2 cups liquid egg whites into the empty side.
  5. Scramble the egg whites gently with a spatula for 2 minutes until soft curds form, then fold everything in the skillet together until uniformly mixed and heated through.
  6. Divide evenly among 4 individual meal prep containers and let cool slightly before covering.
