- 5 hamburger buns
- 1 package sweet potato fries
- 1 cup lettuce
- 1 tomato
- 0.25 cup salsa
Instructions
- Preheat oven to 400°F (200°C) and bake frozen sweet potato fries according to package directions, typically 15-20 minutes, flipping halfway, until crispy.
- While fries cook, mash the rinsed and drained black beans in a large bowl with a fork or potato masher, leaving some whole for texture. Stir in breadcrumbs, chopped yellow onion, chopped fresh cilantro, 1 teaspoon chili powder, 1/2 teaspoon ground cumin, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1 tablespoon olive oil until well combined.
- Form the mixture into 5 patties. Heat a lightly oiled skillet (or the same skillet used for the fries if applicable) over medium heat. Cook the bean burgers for 4-6 minutes per side, or until heated through and lightly browned.
- Toast hamburger buns if desired during the last few minutes of cooking the burgers or fries. Serve bean burgers on toasted buns with sweet potato fries and desired toppings like lettuce, tomato, or salsa.
Notes
For extra flavor, you can add a pinch of smoked paprika to the burger mixture. Leftovers are great reheated or crumbled into a salad.
