Instructions

  1. In a large mixing bowl, gently combine the ground beef, egg, fresh cilantro, ground cumin, garlic powder, 1 teaspoon of the salt, and 1/4 teaspoon of the black pepper. Roll into 24 small meatballs (about 1.5 inches each).
  2. Heat olive oil in a large Dutch oven or stockpot over medium-high heat. Add the diced yellow onion and cook for 3 minutes until translucent.
  3. Pour in the beef broth and crushed tomatoes. Stir in the red potatoes, carrots, remaining 1/2 teaspoon salt, and remaining 1/4 teaspoon black pepper. Bring liquid to a rapid boil.
  4. Carefully drop the meatballs into the boiling broth. Reduce heat to medium, add the sliced zucchini, and simmer uncovered for 10 minutes until the meatballs are cooked through (internal temperature reaches 160°F) and potatoes are fork-tender.
  5. Ladle soup into deep bowls, ensuring each serving receives meatballs, potatoes, and vegetables in the rich broth.

Notes

Red potatoes hold their shape well when boiled quickly in the broth.
