Instructions
- Heat 1 tablespoon olive oil in a skillet over medium heat. Add 1/2 cup finely diced yellow onion and cook until softened, about 3-4 minutes. Add 1/2 pound ground turkey and cook, breaking it up, until no longer pink, about 5-7 minutes. Drain any excess fat.
- Stir in 1 teaspoon chili powder, 1/2 teaspoon ground cumin, 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Cook for 1-2 minutes until fragrant.
- While turkey cooks, bring 2 cups water to a boil in a small saucepan. Stir in 1 cup white rice and 1/4 teaspoon salt. Reduce heat to low, cover, and simmer for 15 minutes, or until water is absorbed and rice is tender. Remove from heat and let stand for 5 minutes.
- Warm 4 gluten-free flour tortillas according to package directions (microwave or skillet).
- Divide the seasoned ground turkey among the warmed tortillas. Serve with a side of white rice and 1/2 cup mild, smooth salsa, if desired.
