- 1 whole lime (cut into wedges)
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper (freshly ground)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add minced garlic and diced green bell pepper, cooking for 3 minutes until softened.
- Add ground turkey breast to the skillet, breaking it up with a wooden spoon. Stir in smoked paprika, ground cumin, 1/4 teaspoon of the salt, and black pepper. Cook for 7 to 8 minutes until turkey is thoroughly cooked and reaches an internal temperature of 165°F.
- In a small bowl, combine diced Roma tomatoes, chopped fresh cilantro, remaining 1/4 teaspoon of salt, and the juice of half the lime to make a fresh salsa.
- Spoon the warm seasoned turkey mixture into crisp butter lettuce leaves, top with spoonfuls of the fresh tomato salsa, and serve with remaining lime wedges.
