- 1 yellow onion (medium, sliced)
- 2 bell peppers (any color, sliced)

Instructions
- Heat 1 tablespoon olive oil in a large skillet or cast-iron pan over medium-high heat. Add the sliced yellow onion and cook for 3-4 minutes until softened. Add the sliced bell peppers and cook for another 3-5 minutes until tender-crisp.
- Push the vegetables to one side of the skillet. Add the ground beef to the other side, breaking it apart with a spoon. Cook until browned, about 5-7 minutes. Drain any excess fat.
- Stir in the minced garlic, chili powder, ground cumin, smoked paprika, salt, and black pepper. Cook for 1 minute until fragrant.
- Combine the beef and vegetables, then pour in the chicken broth. Bring to a simmer and cook for 2-3 minutes, allowing the flavors to meld. If desired, sprinkle with shredded cheddar cheese just before serving and let it melt briefly.
- Serve hot directly from the skillet, allowing everyone to scoop their desired portions.
