Instructions

  1. Heat 1 tablespoon olive oil in a large skillet or cast-iron pan over medium-high heat. Add the sliced yellow onion and cook for 3-4 minutes until softened. Add the sliced bell peppers and cook for another 3-5 minutes until tender-crisp.
  2. Push the vegetables to one side of the skillet. Add the ground beef to the other side, breaking it apart with a spoon. Cook until browned, about 5-7 minutes. Drain any excess fat.
  3. Stir in the minced garlic, chili powder, ground cumin, smoked paprika, salt, and black pepper. Cook for 1 minute until fragrant.
  4. Combine the beef and vegetables, then pour in the chicken broth. Bring to a simmer and cook for 2-3 minutes, allowing the flavors to meld. If desired, sprinkle with shredded cheddar cheese just before serving and let it melt briefly.
  5. Serve hot directly from the skillet, allowing everyone to scoop their desired portions.

Notes

Adjust the amount of chili powder for desired heat. This dish reheats well for leftovers.
